Description

A fresh and vibrant orzo salad combined with colorful vegetables and creamy feta cheese, perfect for summer picnics or healthy lunches.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the orzo pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked orzo with cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad and toss well to combine.
  5. Sprinkle feta cheese on top and serve chilled.
