A fresh and vibrant orzo salad combined with colorful vegetables and creamy feta cheese, perfect for summer picnics or healthy lunches.
Ingredients
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked orzo with cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss well to combine.
- Sprinkle feta cheese on top and serve chilled.
