A simple and delicious one-pan dinner featuring Parmesan crusted chicken, roasted baby potatoes, and green beans, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix Parmesan cheese, salt, pepper, and Italian seasoning.
  3. Coat each chicken breast with olive oil and then dip in the Parmesan mixture.
  4. On a sheet pan, arrange the halved baby potatoes and green beans. Drizzle with olive oil, add minced garlic, and season with salt and pepper.
  5. Place the Parmesan crusted chicken breasts on the sheet pan.
  6. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.

Notes

For best results, coat the chicken well in the Parmesan mixture for a crispy crust. You can also add other vegetables like bell peppers or carrots to the sheet pan.
