A simple and delicious one-pan dinner featuring Parmesan crusted chicken, roasted baby potatoes, and green beans, perfect for busy weeknights.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 2 cups baby potatoes, halved
- 2 cups green beans, trimmed
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix Parmesan cheese, salt, pepper, and Italian seasoning.
- Coat each chicken breast with olive oil and then dip in the Parmesan mixture.
- On a sheet pan, arrange the halved baby potatoes and green beans. Drizzle with olive oil, add minced garlic, and season with salt and pepper.
- Place the Parmesan crusted chicken breasts on the sheet pan.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Serve warm and enjoy!
Notes
For best results, coat the chicken well in the Parmesan mixture for a crispy crust. You can also add other vegetables like bell peppers or carrots to the sheet pan.
