Description

Delightful cookies that combine the rich flavors of pecans with a chewy texture, perfect for holiday gatherings or cozy snacks.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter (or vegan butter)
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup pecans, chopped
  • 1/4 cup corn syrup (or maple syrup for vegan version)
  • 1/4 teaspoon baking powder


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the vanilla extract and salt.
  4. Gradually add the flour and baking powder, mixing until just combined.
  5. Fold in the chopped pecans.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. In a small bowl, mix together the corn syrup and a few more chopped pecans.
  8. Make a small indentation in the center of each cookie and fill it with the pecan mixture.
  9. Bake for 12-15 minutes, or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Best enjoyed fresh out of the oven; pairs well with milk or tea. Can be stored in an airtight container at room temperature for about a week.
