Ingredients
- 2 slices of bread
- 1 ripe avocado
- 2 tablespoons pesto
- 2 eggs
- Salt and pepper to taste
- Olive oil (optional)
- Red pepper flakes (optional)
Instructions
- Toast the bread slices to your desired crispiness.
- While the bread is toasting, poach or fry the eggs to your liking.
- In a small bowl, mash the avocado and season with salt and pepper.
- Spread a tablespoon of pesto on each slice of toasted bread.
- Top each slice with a generous amount of mashed avocado.
- Place a cooked egg on top of the avocado on each slice.
