Ingredients

  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks, fresh or canned
  • 1 cup rice (jasmine or basmati)
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: green onions or cilantro for garnish


Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add diced chicken to the pan and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add diced onion, bell pepper, and garlic to the pan, cooking until vegetables are soft.
  4. Stir in the rice, pineapple chunks, chicken broth, and soy sauce.
  5. Bring to a boil, then cover and reduce heat to low. Cook for about 15-20 minutes or until the rice is tender and the liquid is absorbed.

Notes
