A delightful twist on traditional potstickers, combining ground pork and fresh vegetables with comforting Lo Mein noodles.
Ingredients
- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the Lo Mein noodles according to package instructions, then set aside.
- In a large skillet, brown the ground pork with 1/4 cup of sliced green onions in peanut oil over medium heat.
- In a bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha.
- Add the cooked noodles and coleslaw mix to the skillet with the browned pork.
- Pour the sauce over everything in the skillet.
- Toss the mixture for 2-3 minutes until everything is well-coated and heated through.
- Garnish with the remaining sliced green onions before serving.
Notes
Rinse the noodles after cooking to prevent sticking. Adjust sriracha based on spice preferences. Can substitute ground pork with ground chicken or turkey, or use tofu for a vegetarian option.
