Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 3/4 cups sugar
  • 4 large eggs
  • 1 (15-ounce) can pumpkin puree
  • 1 cup vegetable oil
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, beat together sugar, eggs, pumpkin puree, and oil until smooth.
  4. Gradually fold dry ingredients into wet mixture until just combined.
  5. Spread batter evenly in prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean.
  6. Cool completely before frosting.
  7. To make frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  8. Spread frosting over cooled bars, sprinkle with cinnamon or pecans if desired, then cut into squares.

Notes

Use canned pumpkin puree, not pumpkin pie filling. Cool bars fully before frosting to avoid melting. Bars can be customized with nuts, chocolate chips, or maple glaze.
