Description

Ingredients

1 3/4 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 cup pumpkin purée

1/2 cup vegetable oil or melted butter

1 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

1/2 tsp salt

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. In a bowl, whisk flour, baking soda, salt, and spices.

3. In another bowl, mix sugars, pumpkin purée, eggs, oil, and vanilla until smooth.

4. Gradually fold dry ingredients into wet mixture until just combined.

5. Pour batter into prepared pan and smooth top.

6. Bake for 55–65 minutes until a toothpick inserted comes out clean.

7. Cool for 10 minutes in pan, then transfer to a wire rack to cool completely.

Notes

For extra flavor, add chocolate chips or nuts.

Store at room temperature for 3 days or freeze for up to 3 months.
