Description

A cozy fall-inspired breakfast made with thick slices of bread soaked in a pumpkin custard flavored with cinnamon, nutmeg, and vanilla, then cooked to golden perfection and served with maple syrup.

Ingredients

  • 4 thick slices of brioche, challah, or Texas toast
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup pumpkin purée
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • Butter for cooking
  • Maple syrup, for serving
  • Powdered sugar or toasted nuts (optional)

Instructions

  1. In a shallow dish, whisk together eggs, milk, pumpkin purée, cinnamon, nutmeg, and vanilla until smooth.
  2. Dip each slice of bread into the mixture, coating both sides evenly without making it soggy.
  3. Heat a non-stick skillet or cast-iron pan over medium heat and add a little butter.
  4. Cook the soaked bread slices for 2–3 minutes on each side, until golden brown and slightly crisp.
  5. Serve warm with maple syrup, powdered sugar, or toasted nuts. For variations, try adding whipped cream, fresh berries, or a crunchy topping of toasted pecans.

Notes

For best results, use pumpkin purée (not pumpkin pie filling) and sturdy bread like brioche or challah. Cook on medium heat to avoid soggy centers or burnt edges.
