Ingredients
- 1 box yellow cake mix
- 1/2 cup (1 stick) butter, softened
- 3 eggs, divided
- 1 can (15 oz) pumpkin puree
- 1 package (8 oz) cream cheese, softened
- 1 teaspoon pumpkin spice (or a mix of cinnamon, nutmeg, ginger, and cloves)
- 3 1/2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a bowl, combine the cake mix, softened butter, and 1 egg. Mix until combined, then press the mixture evenly into the prepared pan to form the crust.
- In another bowl, beat together cream cheese, pumpkin puree, 2 eggs, pumpkin spice, and powdered sugar until smooth.
- Pour the pumpkin mixture over the crust and spread evenly.
- Bake for 40–45 minutes, until the edges are set but the center is still slightly jiggly.
- Let cool completely before slicing into squares or bars. Dust with powdered sugar if desired.
Notes
For the best texture, don’t overbake—the center should remain slightly gooey. Use full-fat cream cheese for a richer flavor, and feel free to add chopped pecans, caramel drizzle, or white chocolate chips for fun variations.
