Ingredients

  • 8 oz block of feta cheese, drained (220 grams)
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 1-2 Tbsp honey (plus more, to serve)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Freshly cracked black pepper
  • Chopped walnuts (optional; raw or toasted)
  • Extra honey drizzle
  • Crusty, toasted bread (like sourdough or baguette)
  • Crackers


Instructions

  1. Add the feta cheese and Greek yogurt to a food processor and blend until smooth, scraping down the sides as needed.
  2. Add the pumpkin puree, honey, thyme, and black pepper; blend until well combined.
  3. Transfer the mixture to the fridge and chill, covered, for 30-60 minutes.
  4. When ready to serve, transfer the dip to a bowl and garnish with walnuts, fresh thyme, honey drizzle, and black pepper.
  5. Serve with toasted bread or crackers for dipping.

Notes

Make sure the feta cheese is well-drained to avoid a watery dip. Adjust sweetness with honey as desired. Fresh herbs elevate the flavor; dried thyme can be used in a pinch.
