A delightful and easy breakfast casserole that combines the flavors of French toast with sweet blueberries.
Ingredients
- 1 loaf of bread (French or Brioche)
- 4 large eggs
- 2 cups of milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 cups fresh blueberries
- Powdered sugar (for serving)
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- Cut the bread into cubes and place them in the baking dish.
- In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon.
- Pour the egg mixture over the bread cubes and gently mix to combine.
- Fold in the blueberries.
- Cover the dish and refrigerate for at least 30 minutes or overnight.
- Bake for 45-50 minutes until the top is golden.
- Dust with powdered sugar before serving.
Notes
Best served warm with maple syrup or whipped cream. Can be prepared the night before for convenience.
