Description

A delightful and easy breakfast casserole that combines the flavors of French toast with sweet blueberries.


Ingredients

  • 1 loaf of bread (French or Brioche)
  • 4 large eggs
  • 2 cups of milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 cups fresh blueberries
  • Powdered sugar (for serving)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Cut the bread into cubes and place them in the baking dish.
  3. In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon.
  4. Pour the egg mixture over the bread cubes and gently mix to combine.
  5. Fold in the blueberries.
  6. Cover the dish and refrigerate for at least 30 minutes or overnight.
  7. Bake for 45-50 minutes until the top is golden.
  8. Dust with powdered sugar before serving.

Notes

Best served warm with maple syrup or whipped cream. Can be prepared the night before for convenience.
