A delicious and easy breakfast option with layers of sweet bread and juicy blueberries, perfect for any day.
Ingredients
- 1 loaf of bread (brioche or French bread)
- 6 large eggs
- 2 cups milk
- 1/2 cup sugar
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 2 cups blueberries
- Powdered sugar for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Tear the bread into pieces and place half in the prepared dish.
- In a large bowl, whisk together eggs, milk, sugar, vanilla, and cinnamon. Pour half of the mixture over the bread in the baking dish.
- Layer on the blueberries, then add the remaining bread pieces on top.
- Pour the remaining egg mixture over the top, gently pressing the bread to absorb the liquid.
- Cover and refrigerate for at least 1 hour or overnight.
- Bake for 35-40 minutes, uncovered, until golden and set. Serve warm, dusted with powdered sugar if desired.
Notes
For best results, use day-old bread. Feel free to mix in other fruits or add nuts for variety.
