Raisin Pumpkin Spice Bread

Description

A moist, sweet, and spiced fall bread made with pumpkin puree, warm spices, and chewy raisins. Perfect for breakfast, a fall snack, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1 cup pumpkin puree (canned or fresh)
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil or melted butter
  • 1 cup raisins


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment.
  2. In a large bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In another bowl, whisk pumpkin puree, eggs, granulated sugar, brown sugar, and oil until smooth.
  4. Fold dry ingredients into wet until just combined. Do not overmix.
  5. Toss raisins in a spoonful of flour, then fold into the batter.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake 55–65 minutes, until a toothpick inserted in the center comes out clean.
  8. Cool 10 minutes in pan, then transfer to a wire rack to cool completely.

Notes

For extra flavor, soak raisins in warm water, juice, or rum before folding them in. Optional: add nuts, chocolate chips, or cranberries for variation.
