Description
A moist, sweet, and spiced fall bread made with pumpkin puree, warm spices, and chewy raisins. Perfect for breakfast, a fall snack, or dessert.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1 cup pumpkin puree (canned or fresh)
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil or melted butter
- 1 cup raisins
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment.
- In a large bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In another bowl, whisk pumpkin puree, eggs, granulated sugar, brown sugar, and oil until smooth.
- Fold dry ingredients into wet until just combined. Do not overmix.
- Toss raisins in a spoonful of flour, then fold into the batter.
- Pour batter into prepared pan and smooth the top.
- Bake 55–65 minutes, until a toothpick inserted in the center comes out clean.
- Cool 10 minutes in pan, then transfer to a wire rack to cool completely.
Notes
For extra flavor, soak raisins in warm water, juice, or rum before folding them in. Optional: add nuts, chocolate chips, or cranberries for variation.
