- 1 tbsp olive oil
- 1 lb Italian sausage (hot or mild)
- 1 medium onion, diced
- 3–4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp thyme
- ¼–½ tsp red pepper flakes (optional)
- 2 tbsp tomato paste
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 cup tomato soup (optional)
- 8 lasagna noodles, broken into pieces
- Salt and black pepper, to taste
- 1 cup shredded mozzarella
- ½ cup ricotta cheese
- ¼ cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add Italian sausage and cook until browned, breaking it into chunks (about 7–8 minutes).
- Stir in diced onion and garlic; cook until softened.
- Add oregano, basil, thyme, and red pepper flakes. Stir well.
- Mix in tomato paste and cook 1–2 minutes to enhance flavor.
- Add crushed tomatoes, tomato soup (if using), and broth. Stir to combine.
- Bring to a boil, then reduce to simmer.
- Add broken lasagna noodles and simmer 15–20 minutes until noodles are tender.
- Season with salt and pepper to taste.
- Stir in mozzarella and Parmesan until melted. Swirl in ricotta or dollop on top before serving.
- Garnish with fresh basil or parsley and serve hot.
Notes
For freezing, cook without noodles and add fresh ones when reheating. Use full-fat cheeses for best texture. Stir frequently to prevent noodles from sticking.
