  • 1 lb Italian sausage (hot or mild)
  • 1 medium onion, diced
  • 34 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp thyme
  • ¼½ tsp red pepper flakes (optional)
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup tomato soup (optional)
  • 8 lasagna noodles, broken into pieces
  • Salt and black pepper, to taste
  • 1 cup shredded mozzarella
  • ½ cup ricotta cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add Italian sausage and cook until browned, breaking it into chunks (about 7–8 minutes).
  3. Stir in diced onion and garlic; cook until softened.
  4. Add oregano, basil, thyme, and red pepper flakes. Stir well.
  5. Mix in tomato paste and cook 1–2 minutes to enhance flavor.
  6. Add crushed tomatoes, tomato soup (if using), and broth. Stir to combine.
  7. Bring to a boil, then reduce to simmer.
  8. Add broken lasagna noodles and simmer 15–20 minutes until noodles are tender.
  9. Season with salt and pepper to taste.
  10. Stir in mozzarella and Parmesan until melted. Swirl in ricotta or dollop on top before serving.
  11. Garnish with fresh basil or parsley and serve hot.

Notes

For freezing, cook without noodles and add fresh ones when reheating. Use full-fat cheeses for best texture. Stir frequently to prevent noodles from sticking.
