Ingredients
- 4 boneless, skinless chicken thighs
- 1 lb baby potatoes, halved
- 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
- 1/2 cup unsalted butter, melted
- 6 cloves garlic, minced
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix the melted butter, minced garlic, Italian seasoning, salt, and pepper.
- Place the chicken, potatoes, and vegetables on a sheet pan.
- Drizzle the garlic butter mixture over everything and toss to coat.
