Ingredients

  • 4 chicken thighs or breasts
  • 2 cups baby potatoes, halved
  • 2 cups mixed vegetables (like bell peppers, carrots, and broccoli)
  • 1/4 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, melt the butter over medium heat. Add the minced garlic, thyme, paprika, salt, and pepper. Stir well to combine.
  3. Place the chicken thighs or breasts on a large sheet pan.
  4. Arrange the halved potatoes and mixed vegetables around the chicken.
  5. Drizzle the garlic butter mixture over the chicken and veggies.
  6. Toss everything to coat well.
  7. Bake in the preheated oven for about 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
