Description
A flavorful and satisfying steak infused with cowboy butter, perfect for any occasion.
Ingredients
- 1 stick of butter, mostly melted
- 4 cloves of garlic, minced
- 1/2 lemon for zest and 1 tablespoon of juice
- 1 tablespoon of Dijon mustard
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne or red pepper flakes
- 1/2 teaspoon of dried thyme
- 1 teaspoon of red pepper flakes or cayenne powder
- 1 tablespoon of chives or green onions, sliced
- 2 tablespoons of fresh parsley, minced
- Salt and pepper, adjusted to taste
- Optional: rosemary sprig and smashed garlic for the cast iron preparation
Instructions
- Let the steak reach room temperature. Pat it dry and season generously with salt, pepper, and garlic.
- Heat a cast iron skillet over high heat until smoking hot.
- Add avocado oil to the skillet, place your steak in, and listen for the sizzle!
- After flipping the steak, add European butter, minced garlic, and herbs. Continuously spoon the melted butter over the steak.
- Aim for medium-rare at 130°F with a meat thermometer.
- Let it rest for at least 5 minutes to redistribute juices.
- Mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices. Whisk until creamy.
- Slice the steak against the grain and top with a dollop of cowboy butter.
Notes
Use a high-quality cast iron skillet for best results. Don’t skip the resting time.
