Description
A delicious steak topped with a rich and flavorful homemade cowboy butter, perfect for special occasions or weekend barbecues.
Ingredients
- 1 stick of butter, mostly melted
- 4 cloves of garlic, minced
- 1/2 lemon for zest and 1 tablespoon of juice
- 1 tablespoon of Dijon mustard
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne or red pepper flakes
- 1/2 teaspoon of dried thyme
- 1 teaspoon of red pepper flakes or cayenne powder
- 1 tablespoon of chives or green onions, sliced
- 2 tablespoons of fresh parsley, minced
- Salt and pepper, adjusted to taste
- Optional: rosemary sprig and smashed garlic for preparation
Instructions
- Let your steak reach room temperature and pat it dry with paper towels, seasoning it with salt, pepper, and minced garlic.
- Heat a cast iron skillet over high heat until it’s smoking hot.
- Add avocado oil to the skillet and place your steak in the pan, listening for the sizzle.
- After a few minutes, flip the steak and add European butter, minced garlic, and herbs, spooning melted butter over the steak as it cooks.
- Aim for medium-rare (about 130°F) and check the temperature with a meat thermometer.
- Once cooked, let the steak rest for at least 5 minutes.
- In a mixing bowl, combine softened butter with parsley, green onions, Dijon mustard, lemon juice, lemon zest, and spices; whisk until creamy.
- Slice the steak against the grain and top with a generous dollop of cowboy butter.
Notes
Let the steak rest after cooking for best results. Experiment with different herbs and spices in the cowboy butter.
