Description

A delicious steak topped with a rich and flavorful homemade cowboy butter, perfect for special occasions or weekend barbecues.


Ingredients

  • 1 stick of butter, mostly melted
  • 4 cloves of garlic, minced
  • 1/2 lemon for zest and 1 tablespoon of juice
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of red pepper flakes or cayenne powder
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for preparation


Instructions

  1. Let your steak reach room temperature and pat it dry with paper towels, seasoning it with salt, pepper, and minced garlic.
  2. Heat a cast iron skillet over high heat until it’s smoking hot.
  3. Add avocado oil to the skillet and place your steak in the pan, listening for the sizzle.
  4. After a few minutes, flip the steak and add European butter, minced garlic, and herbs, spooning melted butter over the steak as it cooks.
  5. Aim for medium-rare (about 130°F) and check the temperature with a meat thermometer.
  6. Once cooked, let the steak rest for at least 5 minutes.
  7. In a mixing bowl, combine softened butter with parsley, green onions, Dijon mustard, lemon juice, lemon zest, and spices; whisk until creamy.
  8. Slice the steak against the grain and top with a generous dollop of cowboy butter.

Notes

Let the steak rest after cooking for best results. Experiment with different herbs and spices in the cowboy butter.
