A flavorful and easy slow cooker dish combining tender beef with creamy coconut milk and spicy red curry paste.
Ingredients
- 2 lbs beef chuck, cut into cubes
- 1 can (14 oz) coconut milk
- 2 tablespoons red curry paste
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 bell pepper, sliced
- 2 cups beef broth
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a slow cooker, combine beef, coconut milk, red curry paste, onion, garlic, ginger, bell pepper, beef broth, soy sauce, and lime juice.
- Stir to mix well.
- Season with salt and pepper.
- Cover and cook on low for 360-480 minutes or until beef is tender.
- Serve hot, garnished with fresh cilantro.
Notes
For a milder flavor, adjust the amount of red curry paste. You can also add carrots or peas for more veggies.
