Description

A flavorful and easy slow cooker dish combining tender beef with creamy coconut milk and spicy red curry paste.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 bell pepper, sliced
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a slow cooker, combine beef, coconut milk, red curry paste, onion, garlic, ginger, bell pepper, beef broth, soy sauce, and lime juice.
  2. Stir to mix well.
  3. Season with salt and pepper.
  4. Cover and cook on low for 360-480 minutes or until beef is tender.
  5. Serve hot, garnished with fresh cilantro.

Notes

For a milder flavor, adjust the amount of red curry paste. You can also add carrots or peas for more veggies.
