Description

A delightful slow cooker meal that combines tender beef with creamy mashed potatoes and rich gravy, perfect for busy weeknights or gatherings.


Ingredients

  • 2-3 pounds beef chuck roast
  • 1 cup beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 4-5 large potatoes, peeled and chopped
  • Butter (for mashed potatoes)
  • Milk (for mashed potatoes)
  • 4 slices of bread, toasted
  • Brown gravy mix or homemade brown gravy


Instructions

  1. Place the chopped onion, minced garlic, and beef chuck roast in the slow cooker.
  2. Add the beef broth, Worcestershire sauce, salt, and pepper.
  3. Cook on low for 480 minutes (8 hours) or until the beef is fork-tender.
  4. About 30 minutes before serving, prepare the mashed potatoes by boiling the chopped potatoes until tender. Drain and mash with butter and milk.
  5. Toast the bread slices.
  6. To assemble, place the toasted bread on a plate, add a layer of mashed potatoes, followed by the shredded beef, and smother with brown gravy.
  7. Serve warm and enjoy!

Notes

For extra flavor, sear the beef before adding it to the slow cooker. Feel free to add vegetables like carrots or peas for added nutrition.
