Description

A comforting and satisfying dish with tender beef, flavorful broth, and noodles, all made easy in a slow cooker.


Ingredients

  • 2 lbs beef (chuck or brisket)
  • 8 oz ramen noodles
  • 4 cups beef broth
  • 1/4 cup soy sauce
  • 1 tbsp ginger (fresh or powdered)
  • 3 cloves garlic (minced)
  • 2 green onions (for garnish)
  • 4 soft-boiled eggs (for garnish)
  • 2 cups fresh greens (spinach, bok choy, etc.)
  • 2 cups vegetables (carrots, bell peppers, etc.)


Instructions

  1. In a slow cooker, place the beef and pour in the beef broth, soy sauce, ginger, and garlic.
  2. Cover and cook on low for 360-480 minutes or until the beef is tender.
  3. Remove the beef, shred it, and return it to the slow cooker.
  4. Add the ramen noodles and let them cook in the broth for about 5 minutes, or until tender.
  5. Serve the ramen in bowls, topped with soft-boiled eggs, fresh greens, and crunchy vegetables.

Notes

For extra flavor, sear the beef before adding it to the slow cooker. Use vegetable broth and tofu for a vegetarian version.
