A comforting and satisfying dish with tender beef, flavorful broth, and noodles, all made easy in a slow cooker.
Ingredients
- 2 lbs beef (chuck or brisket)
- 8 oz ramen noodles
- 4 cups beef broth
- 1/4 cup soy sauce
- 1 tbsp ginger (fresh or powdered)
- 3 cloves garlic (minced)
- 2 green onions (for garnish)
- 4 soft-boiled eggs (for garnish)
- 2 cups fresh greens (spinach, bok choy, etc.)
- 2 cups vegetables (carrots, bell peppers, etc.)
Instructions
- In a slow cooker, place the beef and pour in the beef broth, soy sauce, ginger, and garlic.
- Cover and cook on low for 360-480 minutes or until the beef is tender.
- Remove the beef, shred it, and return it to the slow cooker.
- Add the ramen noodles and let them cook in the broth for about 5 minutes, or until tender.
- Serve the ramen in bowls, topped with soft-boiled eggs, fresh greens, and crunchy vegetables.
Notes
For extra flavor, sear the beef before adding it to the slow cooker. Use vegetable broth and tofu for a vegetarian version.
