Description

A warm and comforting dish that’s easy to make in a slow cooker, featuring tender beef, flavorful broth, and fresh vegetables.


Ingredients

  • 1 pound beef (flank or chuck)
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 4 packs of ramen noodles (discard seasoning packets)
  • 2 soft-boiled eggs (optional)
  • Fresh greens (spinach or bok choy)
  • Chopped vegetables (carrots, bell peppers, etc.)
  • Green onions (for garnish)
  • Sesame seeds (for garnish)


Instructions

  1. In a slow cooker, add the beef, beef broth, soy sauce, miso paste, garlic, and ginger.
  2. Cover and cook on low for 6-8 hours or until the beef is tender.
  3. Remove the beef, shred it, and return it to the slow cooker.
  4. In a separate pot, cook the ramen noodles according to package instructions, then drain.
  5. Serve the noodles in bowls, topped with the beef broth, shredded beef, soft-boiled eggs, fresh greens, and vegetables.
  6. Garnish with green onions and sesame seeds.

Notes

For extra flavor, sear the beef before adding it to the slow cooker. Customize with your favorite vegetables or make it vegetarian by using firm tofu and vegetable broth.
