Description

A comforting bowl of slow-cooked beef ramen noodles that’s easy to customize with your favorite toppings.


Ingredients

  • 1 lb beef (chuck roast or brisket)
  • 4 cups beef broth
  • 2 packs of ramen noodles
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Toppings: soft-boiled eggs, fresh greens (like spinach or bok choy), sliced green onion, and crunchy vegetables (like bean sprouts or carrots)


Instructions

  1. In the slow cooker, combine the chopped onion, minced garlic, grated ginger, soy sauce, miso paste, sesame oil, salt, and pepper.
  2. Place the beef on top of the mixture and pour in the beef broth.
  3. Cook on low for 360-480 minutes (6-8 hours), or until the beef is tender and shreds easily.
  4. Remove the beef, shred it, and return it to the slow cooker.
  5. About 30 minutes before serving, add the ramen noodles to the slow cooker and cook according to package instructions.
  6. Serve the ramen in bowls and top with your choice of soft-boiled eggs, fresh greens, and crunchy vegetables.

Notes

For extra flavor, sear the beef before adding it to the slow cooker. You can add additional vegetables for more nutrition.
