Description
A comforting bowl of slow-cooked beef ramen noodles that’s easy to customize with your favorite toppings.
Ingredients
- 1 lb beef (chuck roast or brisket)
- 4 cups beef broth
- 2 packs of ramen noodles
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Toppings: soft-boiled eggs, fresh greens (like spinach or bok choy), sliced green onion, and crunchy vegetables (like bean sprouts or carrots)
Instructions
- In the slow cooker, combine the chopped onion, minced garlic, grated ginger, soy sauce, miso paste, sesame oil, salt, and pepper.
- Place the beef on top of the mixture and pour in the beef broth.
- Cook on low for 360-480 minutes (6-8 hours), or until the beef is tender and shreds easily.
- Remove the beef, shred it, and return it to the slow cooker.
- About 30 minutes before serving, add the ramen noodles to the slow cooker and cook according to package instructions.
- Serve the ramen in bowls and top with your choice of soft-boiled eggs, fresh greens, and crunchy vegetables.
Notes
For extra flavor, sear the beef before adding it to the slow cooker. You can add additional vegetables for more nutrition.
