Ingredients
- 1 pound beef (chuck or brisket), cut into chunks
- 4 cups beef broth
- 2 cups water
- 3 packs of ramen noodles (discard the seasoning packets)
- 2 tablespoons soy sauce
- 1 tablespoon miso paste (optional)
- 1 teaspoon ginger, minced
- 4 cloves garlic, minced
- 1 tablespoon sesame oil
- Soft-boiled eggs (for serving)
- Fresh greens (like spinach or bok choy) (for serving)
- Crunchy vegetables (like carrots or radishes) (for serving)
- Green onions (for garnish)
Instructions
- In a slow cooker, combine beef chunks, beef broth, water, soy sauce, miso paste, ginger, garlic, and sesame oil.
- Cover and cook on low for 420 minutes (7-8 hours) or on high for 180 minutes (3-4 hours), until the beef is tender.
- Remove beef from slow cooker and shred it with two forks.
- Return shredded beef to the broth.
- About 10 minutes before serving, add ramen noodles to the slow cooker and let them cook until tender.
- Serve in bowls topped with soft-boiled eggs, fresh greens, and crunchy vegetables. Garnish with green onions.
Notes
Use a good quality beef broth for richer flavor. For a spicier kick, add chili peppers when serving. Cook the ramen to be tender but not mushy.
