Description

A comforting and flavorful dish combining tender beef with hearty ramen noodles, perfect for a cozy dinner.


Ingredients

  • 1 pound beef (chuck or brisket), cut into chunks
  • 4 cups beef broth
  • 2 cups water
  • 3 packs of ramen noodles (discard the seasoning packets)
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste (optional)
  • 1 teaspoon ginger, minced
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Soft-boiled eggs (for serving)
  • Fresh greens (like spinach or bok choy) (for serving)
  • Crunchy vegetables (like carrots or radishes) (for serving)
  • Green onions (for garnish)


Instructions

  1. In a slow cooker, combine beef chunks, beef broth, water, soy sauce, miso paste, ginger, garlic, and sesame oil.
  2. Cover and cook on low for 420 minutes (7-8 hours) or on high for 180 minutes (3-4 hours), until the beef is tender.
  3. Remove beef from slow cooker and shred it with two forks.
  4. Return shredded beef to the broth.
  5. About 10 minutes before serving, add ramen noodles to the slow cooker and let them cook until tender.
  6. Serve in bowls topped with soft-boiled eggs, fresh greens, and crunchy vegetables. Garnish with green onions.

Notes

Use a good quality beef broth for richer flavor. For a spicier kick, add chili peppers when serving. Cook the ramen to be tender but not mushy.
