Description

A tender and juicy chicken dish that is perfect for busy days, easy to prepare in a slow cooker.


Ingredients

  • 2 lbs chicken breasts (boneless, skinless)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 4 tbsp butter (cubed)
  • 4 cloves garlic (minced)
  • 0.5 cup chicken broth
  • 1 tbsp lemon juice
  • 1 tsp thyme (dried or fresh sprigs)


Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Place the chicken in the slow cooker in a single layer.
  3. Add the cubed butter, minced garlic, chicken broth, lemon juice, and thyme on top of the chicken.
  4. Cover the slow cooker with its lid and cook on LOW for 180-240 minutes or on HIGH for 90-120 minutes until the chicken is tender.
  5. Once cooked, slice or shred the chicken and spoon some of the sauce over the top before serving.

Notes

For extra flavor, marinate the chicken in the seasoning for a few hours before cooking. You can add vegetables like carrots or potatoes for a complete meal.
