Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup salsa
- 1 cup rice
- 2 avocados, diced
- 1/4 cup cilantro, chopped

- Cilantro lime vinaigrette, for drizzling
Instructions
- Place chicken breasts in the slow cooker and cover with salsa.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks.
- Prepare rice according to package instructions.
- In bowls, layer rice, shredded chicken, diced avocados, chopped cilantro, cheese, and beans.
- Drizzle with cilantro lime vinaigrette before serving.
Notes
Use low-sodium salsa for better health. You can also try brown rice and add vegetables for extra nutrition.
