Description

Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 3 cups diced potatoes (Yukon Gold or red)
- 2 cups sliced carrots
- 1 large onion, chopped
- 1 cup celery, chopped
- 3–4 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- Salt and black pepper to taste
- Optional: 1 tbsp cornstarch + 2 tbsp cold water for thickening
- Optional: 1/2 cup heavy cream or coconut milk for creaminess
Instructions
- Arrange diced vegetables at the bottom of your slow cooker.
- Season chicken thighs with salt and pepper and place on top of vegetables.
- Pour chicken broth over the ingredients and add herbs and garlic.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and vegetables are soft.
- If you prefer a thicker stew, mix cornstarch with cold water and stir it in about 30 minutes before serving.
- Stir gently, adjust seasoning, and add optional cream or coconut milk for richness.
- Serve warm with crusty bread, rice, or salad.
Notes
Prep ingredients evenly for consistent cooking. For extra flavor, brown chicken before slow cooking. Substitute chicken breasts for a leaner option or add peas, beans, or sweet potatoes for variety.
