Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 cups diced potatoes (Yukon Gold or red)
  • 2 cups sliced carrots
  • 1 large onion, chopped
  • 1 cup celery, chopped
  • 34 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and black pepper to taste
  • Optional: 1 tbsp cornstarch + 2 tbsp cold water for thickening
  • Optional: 1/2 cup heavy cream or coconut milk for creaminess


Instructions

  1. Arrange diced vegetables at the bottom of your slow cooker.
  2. Season chicken thighs with salt and pepper and place on top of vegetables.
  3. Pour chicken broth over the ingredients and add herbs and garlic.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and vegetables are soft.
  5. If you prefer a thicker stew, mix cornstarch with cold water and stir it in about 30 minutes before serving.
  6. Stir gently, adjust seasoning, and add optional cream or coconut milk for richness.
  7. Serve warm with crusty bread, rice, or salad.

Notes

Prep ingredients evenly for consistent cooking. For extra flavor, brown chicken before slow cooking. Substitute chicken breasts for a leaner option or add peas, beans, or sweet potatoes for variety.
