Slow Cooker Garlic Butter Beef Bites & Potatoes

Description

A delicious and easy meal featuring tender beef, garlic butter, and hearty potatoes, all cooked in one pot.


Ingredients

  • 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil (for searing, optional)
  • 1.5 lbs baby potatoes or Yukon Gold potatoes, halved or quartered if large
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped
  • Grated Parmesan cheese


Instructions

  1. Season the beef cubes with salt, pepper, garlic powder, and smoked paprika. If desired, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the beef cubes for about 2-3 minutes until browned on all sides.
  2. In a bowl, toss the halved or quartered potatoes with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1 tablespoon of olive oil.
  3. In a small bowl, combine the melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce. Mix well.
  4. In the slow cooker, add the beef cubes and top them with the seasoned potatoes. Pour the garlic butter sauce over everything.
  5. Cover the slow cooker and cook on low for 6-8 hours or on high for 4-5 hours.
  6. Before serving, sprinkle chopped parsley and grated Parmesan cheese on top.

Notes

For extra flavor, consider marinating the beef with spices for a few hours before cooking. Optional to roast potatoes separately for a crispy texture.
