Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 4 cloves garlic, minced
- 1 cup chicken broth
- Salt and pepper to taste
- 2 cups cooked rice
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine lemon juice, olive oil, oregano, thyme, garlic, salt, and pepper.
- Add the chicken breasts and coat them in the marinade.
- Pour the chicken broth over the chicken.
- Cover and cook on low for 360 minutes or on high for 240 minutes until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the slow cooker to mix with the juices.
- Serve the chicken over fluffy cooked rice and garnish with fresh parsley.
Notes
For best flavor, marinate the chicken well. You can add vegetables like carrots or peas for a heartier meal.
