Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Fresh parsley for garnish


Instructions

  1. In a slow cooker, combine lemon juice, olive oil, oregano, thyme, garlic, salt, and pepper.
  2. Add the chicken breasts and coat them in the marinade.
  3. Pour the chicken broth over the chicken.
  4. Cover and cook on low for 360 minutes or on high for 240 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the slow cooker to mix with the juices.
  6. Serve the chicken over fluffy cooked rice and garnish with fresh parsley.
