Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cooked rice
- Fresh herbs for garnish (optional)
Instructions
- In a slow cooker, combine the chicken breasts, chicken broth, lemon juice and zest, olive oil, garlic, oregano, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours, or high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken using two forks and stir to combine with the sauce.
- Serve the lemon herb chicken over cooked rice and garnish with fresh herbs if desired.
Notes
For extra flavor, consider marinating the chicken in lemon juice and herbs before cooking. You can also add vegetables for a one-pot meal.
