Ingredients
- 4 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)

Instructions
- In a slow cooker, combine the chicken breasts, rice, chicken broth, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
- Stir to combine all the ingredients.
- Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
- Once done, shred the chicken in the slow cooker and stir everything together.
