Description

Soft Gingerbread Cookies are a delightful treat filled with warm spices, perfect for the holidays. Easy to make and irresistible with a cup of hot cocoa.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • Granulated sugar for rolling


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and brown sugar until smooth. Beat in the egg, molasses, and vanilla.
  4. Gradually mix the dry ingredients into the wet ingredients until combined.
  5. Roll the dough into balls and roll each ball in granulated sugar. Place them on a baking sheet lined with parchment paper.
  6. Bake for 8-10 minutes until the edges are set and the centers are slightly sunken.
  7. Let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, chill the cookie dough in the fridge for a few hours before baking. Store in an airtight container for up to one week or freeze for up to three months.
