Soft Gingerbread Cookies are a delightful treat filled with warm spices, perfect for the holidays. Easy to make and irresistible with a cup of hot cocoa.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 teaspoon vanilla extract
- Granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the softened butter and brown sugar until smooth. Beat in the egg, molasses, and vanilla.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Roll the dough into balls and roll each ball in granulated sugar. Place them on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes until the edges are set and the centers are slightly sunken.
- Let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For added flavor, chill the cookie dough in the fridge for a few hours before baking. Store in an airtight container for up to one week or freeze for up to three months.
