Description

Fluffy and delicious sourdough pancakes with a unique tangy flavor, perfect for breakfast or brunch.


Ingredients

  • 2 cups flour
  • 1 cup sourdough starter/discard
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp honey
  • 1 tsp salt
  • 1 1/2 cups milk
  • 1 large egg
  • 2 tbsp coconut oil
  • 1 tsp vanilla (optional)
  • Dash of cinnamon (optional)


Instructions

  1. Preheat your cast iron skillet or griddle.
  2. In a bowl, mix the milk, egg, sourdough starter, honey, vanilla (if using), and coconut oil until well combined.
  3. Add the flour, salt, baking powder, baking soda, and a dash of cinnamon to the mixture. Stir until just combined.
  4. Pour 1/3 cup of batter onto the hot griddle or skillet. Cook until you see big bubbles forming on the surface, then flip and cook until golden and cooked through.
  5. Serve warm topped with butter and syrup, peanut butter, or fruit!

Notes

Ensure your sourdough starter is bubbly and active for the best results. Don’t overmix the batter for fluffy pancakes.
