Description
Delicious and healthy chicken breasts stuffed with a wholesome spinach and cheese mixture, perfect for a light dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, and pepper.
- Take each chicken breast and carefully cut a pocket into the side.
- Stuff each pocket with the spinach mixture.
- Heat olive oil in a skillet over medium heat. Brown each chicken breast for about 3-4 minutes on each side.
- Transfer the chicken breasts to a baking dish and bake in the oven for about 25-30 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before slicing to serve.
Notes
Serve with a side salad or steamed vegetables. A squeeze of lemon adds extra zest.
