Spinach Stuffed Chicken Breasts

Description

Delicious and healthy chicken breasts stuffed with a wholesome spinach and cheese mixture, perfect for a light dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, and pepper.
  3. Take each chicken breast and carefully cut a pocket into the side.
  4. Stuff each pocket with the spinach mixture.
  5. Heat olive oil in a skillet over medium heat. Brown each chicken breast for about 3-4 minutes on each side.
  6. Transfer the chicken breasts to a baking dish and bake in the oven for about 25-30 minutes, or until the chicken is cooked through.
  7. Let the chicken rest for a few minutes before slicing to serve.

Notes

Serve with a side salad or steamed vegetables. A squeeze of lemon adds extra zest.
