Ingredients
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1 cup crushed strawberries (fresh or frozen)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup crushed cornflakes or cookie crumbs for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together butter, sugar, and powdered sugar until light and fluffy.
- Mix in crushed strawberries and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized portions onto a baking sheet lined with parchment paper. Flatten slightly and sprinkle with crushed cornflakes or cookie crumbs.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
