Description
A delicious and healthy Sweet Potato Taco Bowl combining the amazing flavors of tacos with the nutritional benefits of sweet potatoes. Perfect for busy weeknights or casual gatherings.
Ingredients
- 1 large sweet potato, peeled and cubed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- ½ lb ground beef (or turkey/lentils for a vegetarian option)
- 1 tbsp taco seasoning (or homemade)
- ½ cup pico de gallo
- ¼ cup guacamole
- 2 tbsp sour cream (or dairy-free alternative)
Instructions
- Preheat your oven to 425°F (220°C). Toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper. Spread the sweet potato pieces in a single layer on a baking sheet. Roast for 15 minutes, flip them over, and roast for another 10–15 minutes until they are golden and tender.
- In a skillet, cook the ground beef over medium heat until browned. After it’s cooked through, add the taco seasoning and 2 tablespoons of water. Stir it well and let it simmer for 2–3 minutes until the mixture thickens.
- Divide the roasted sweet potatoes into bowls. Top each bowl with the cooked beef, pico de gallo, guacamole, and a dollop of sour cream.
Notes
Customize with additional toppings like cilantro, lime wedges, or crumbled cheese. Can be stored in an airtight container for up to 3 days.
