Ingredients
- 1 lb ground beef or turkey
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups beef or chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, tortilla chips
Instructions
- In a large pot, brown the ground meat over medium heat until fully cooked. Drain any excess fat.
- Add the chopped onion and bell pepper to the pot and sauté until softened.
- Stir in the taco seasoning, beans, corn, diced tomatoes, and broth.
- Bring to a boil, then reduce heat and let simmer for about 20 minutes.
- Adjust seasoning with salt and pepper as needed. Serve hot, garnished with optional toppings.
Notes
For added flavor, use homemade taco seasoning instead of a packet. Adjust the recipe to your preferences with different beans or vegetables.
