Description

A quick and easy meal that’s hearty, flavorful, and perfect for busy weeknights. This comforting dish combines all the favorite flavors of tacos into a soothing soup.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef or chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, tortilla chips


Instructions

  1. In a large pot, brown the ground meat over medium heat until fully cooked. Drain any excess fat.
  2. Add the chopped onion and bell pepper to the pot and sauté until softened.
  3. Stir in the taco seasoning, beans, corn, diced tomatoes, and broth.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  5. Adjust seasoning with salt and pepper as needed. Serve hot, garnished with optional toppings.

Notes

For added flavor, use homemade taco seasoning instead of a packet. Adjust the recipe to your preferences with different beans or vegetables.
