A simple and delicious crock pot recipe for tender beef flank steak and vibrant broccoli, perfect for busy nights.


Ingredients

  • 1.5 pounds beef flank steak, sliced thin
  • 2 cups broccoli florets
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooked rice for serving


Instructions

  1. In a bowl, mix the soy sauce, brown sugar, garlic, ginger, and pepper.
  2. Place the sliced beef in the crock pot and pour the sauce over it.
  3. Cook on low for 4-5 hours or on high for 2-3 hours until the beef is tender.
  4. About 30 minutes before serving, add the broccoli florets.
  5. Mix cornstarch with water to create a slurry and stir it into the crock pot to thicken the sauce.
  6. Serve over cooked rice.

Notes

For variations, you can add bell peppers or snap peas. Serve with sesame seeds or green onions for extra flavor.
