Description

A comforting and hearty soup combining red lentils and creamy coconut milk, perfect for a weeknight dinner or cozy lunch.


Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon red curry paste
  • Salt and pepper, to taste
  • Lime juice, to taste
  • Cilantro, for garnish


Instructions

  1. In a large pot, sauté the onion, garlic, and ginger until fragrant.
  2. Add the red curry paste and cook for another minute.
  3. Stir in the red lentils, coconut milk, and vegetable broth.
  4. Bring to a boil, then reduce to a simmer and cook for about 20 minutes, or until the lentils are tender.
  5. Season with salt, pepper, and lime juice to taste.
  6. Serve hot, garnished with cilantro.

Notes

Rinse the red lentils before cooking. Adjust spice level to taste. For extra creaminess, blend a portion of the soup.
