  • 2 chicken breasts, sliced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon red curry paste
  • 1 stalk lemongrass, bruised

  • 2 cups mixed fresh herbs (such as cilantro and basil)
  • 1 lime, juiced
  • Salt to taste
  • Chili flakes (optional)


Instructions

  1. Heat a bit of oil in a pot over medium heat.
  2. Add ginger and red curry paste and sauté for 1–2 minutes until fragrant.
  3. Add chicken slices and cook until lightly browned.
  4. Pour in coconut milk and chicken broth, then add the bruised lemongrass.
