Ingredients
- 2 chicken breasts, sliced
- 1 can coconut milk
- 2 cups chicken broth
- 1 tablespoon red curry paste
- 1 stalk lemongrass, bruised
- 1 tablespoon ginger, minced
- 2 cups mixed fresh herbs (such as cilantro and basil)
- 1 lime, juiced
- Salt to taste
- Chili flakes (optional)
Instructions
- Heat a bit of oil in a pot over medium heat.
- Add ginger and red curry paste and sauté for 1–2 minutes until fragrant.
- Add chicken slices and cook until lightly browned.
- Pour in coconut milk and chicken broth, then add the bruised lemongrass.
- Simmer for 15 minutes or until chicken is cooked through.
- Stir in fresh herbs and lime juice.
- Season with salt and add chili flakes if desired.
