Ingredients
- 1lb Italian sausage
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans (e.g., cannellini)
- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté the Italian sausage over medium heat until browned.
- Add chopped onions, carrots, and celery, and cook until softened.
- Stir in garlic and cook for another minute.
- Add the white beans, vegetable broth, thyme, rosemary, salt, and pepper.
- Bring to a boil, then lower heat and simmer for 20 minutes.
- Stir in fresh spinach and cook until wilted.
