Description
A warm and hearty Tuscan White Bean Soup that combines white beans, Italian sausage, and fresh vegetables for a nutritious meal.
Ingredients
- 1 can white beans (cannellini or great northern)
- 1 lb Italian sausage (or turkey sausage)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable or chicken broth
- 1 cup fresh spinach
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery; cook until softened.
- Stir in minced garlic and cook for 1 more minute.
- Add Italian sausage, breaking it apart, and cook until browned.
- Add white beans, broth, oregano, thyme, salt, and pepper; bring to a boil.
- Reduce heat and let simmer for 15-20 minutes.
- Stir in fresh spinach right before serving. Enjoy warm!
Notes
Serve hot and consider topping with grated Parmesan cheese. Pairs well with crusty bread or a simple salad.
