Description

A warm and hearty Tuscan White Bean Soup that combines white beans, Italian sausage, and fresh vegetables for a nutritious meal.


Ingredients

  • 1 can white beans (cannellini or great northern)
  • 1 lb Italian sausage (or turkey sausage)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable or chicken broth
  • 1 cup fresh spinach
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery; cook until softened.
  3. Stir in minced garlic and cook for 1 more minute.
  4. Add Italian sausage, breaking it apart, and cook until browned.
  5. Add white beans, broth, oregano, thyme, salt, and pepper; bring to a boil.
  6. Reduce heat and let simmer for 15-20 minutes.
  7. Stir in fresh spinach right before serving. Enjoy warm!

Notes
