Instructions
- Mix watermelon juice, mochiko, and sugar until smooth.
- Heat water in a saucepan and add the mixture. Stir constantly until it thickens.
- Pour the mixture onto a cornstarch-dusted surface and let it cool.
- Once cool, divide the mochi into small portions, flatten them, and add a teaspoon of sweet red bean paste if desired.
