A fun and refreshing treat made with watermelon juice and coconut water, perfect for summer gatherings.
Ingredients
- 1 watermelon
- 1 cup of coconut water
- 1 teaspoon of agar-agar powder
- 2 cups of cold water
- Simple syrup (optional for sweetness)
Instructions
- Cut the watermelon in half and scoop the pulp out into a blender, discarding the seeds.
- Blend the watermelon until smooth and strain through a fine mesh sieve to extract the juice.
- In a saucepan, combine the coconut water and agar-agar. Bring to a boil while stirring to dissolve the agar-agar completely.
- Remove from heat and let it cool slightly.
- Using a dropper, carefully drop the watermelon juice into the coconut water mixture to form small spheres.
- Allow the boba to sit until set.
- Once set, serve in a glass with more watermelon juice or your favorite drink, adding simple syrup if desired.
Notes
For best results, blend the watermelon well and allow the mixture to cool before dropping in the juice. Store the boba in an airtight container in the refrigerator and consume within a few days.
