Description

Tender chicken marinated in yogurt and spices for a flavorful and juicy dish.


Ingredients

  • -2 lbs chicken cutlets
  • 1/2 cup plain full fat Greek yogurt
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1 lemon (juiced, about 1/4 cup)
  • 1 tsp lemon zest
  • 5 garlic cloves (minced)
  • 1 tbsp fresh parsley (chopped fine)
  • 1/2 tsp salt (or more to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp cayenne pepper
  • 1/4 tsp coriander
  • 1/4 tsp cumin


Instructions

  1. Combine the chicken marinade ingredients in a large bowl and whisk together until well mixed.
  2. Add the chicken to the bowl, tossing to coat the pieces evenly with the marinade.
  3. Cover the bowl with plastic wrap and refrigerate for at least an hour, but up to 24 hours for more flavor.
  4. Before cooking, let the chicken come to room temperature for about 20 minutes.
  5. For pan frying, heat a little oil in a skillet over medium heat and cook the chicken for about 5-7 minutes on each side until fully cooked.
  6. For air frying, preheat the air fryer to 375°F (190°C) and cook the chicken for about 12-15 minutes, flipping halfway through.
  7. For baking, preheat the oven to 400°F (200°C), place the chicken on a baking sheet, and bake for 20-25 minutes or until cooked through.

Notes

For extra flavor, let the chicken marinate overnight and use a meat thermometer to ensure the chicken is cooked to 165°F (75°C).
