Ingredients

  • 2 cups mixed salad greens
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Start by washing the mixed salad greens thoroughly and pat them dry. Place them in a large salad bowl.
  2. In a small bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until well combined.
