A refreshing salad featuring the crunchiness of carrots and the sweetness of apples, perfect for lunches and potlucks.
Ingredients
- 2 large carrots, grated
- 2 apples, diced
- 1/4 cup raisins (optional)
- 1/4 cup chopped walnuts (optional)
- 1/4 cup plain yogurt or mayonnaise
- 1 tablespoon honey or maple syrup
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Combine the grated carrots and diced apples in a large bowl.
- If using, add raisins and walnuts.
- Mix together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, salt, and pepper in a separate small bowl until smooth.
- Pour the dressing over the carrot and apple mixture and toss until well coated.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
For a vegan option, use plant-based yogurt and maple syrup.
