Description

A refreshing salad featuring the crunchiness of carrots and the sweetness of apples, perfect for lunches and potlucks.


Ingredients

  • 2 large carrots, grated
  • 2 apples, diced
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup plain yogurt or mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Combine the grated carrots and diced apples in a large bowl.
  2. If using, add raisins and walnuts.
  3. Mix together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, salt, and pepper in a separate small bowl until smooth.
  4. Pour the dressing over the carrot and apple mixture and toss until well coated.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

For a vegan option, use plant-based yogurt and maple syrup.
