Description

A refreshing and healthy dish combining crunchy cucumbers and sweet carrots with a creamy dressing, perfect for any meal.


Ingredients

  • 2 cups cucumbers, sliced
  • 2 cups carrots, grated
  • 1 cup Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)


Instructions

  1. In a large bowl, combine the sliced cucumbers and grated carrots.
  2. In a separate bowl, mix the Greek yogurt (or sour cream), mayonnaise, lemon juice, garlic powder, salt, and pepper together until well combined.
  3. Pour the dressing over the cucumbers and carrots, tossing to coat.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Garnish with fresh dill or parsley if desired and enjoy!

Notes
