A refreshing and healthy dish combining crunchy cucumbers and sweet carrots with a creamy dressing, perfect for any meal.
Ingredients
- 2 cups cucumbers, sliced
- 2 cups carrots, grated
- 1 cup Greek yogurt or sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions
- In a large bowl, combine the sliced cucumbers and grated carrots.
- In a separate bowl, mix the Greek yogurt (or sour cream), mayonnaise, lemon juice, garlic powder, salt, and pepper together until well combined.
- Pour the dressing over the cucumbers and carrots, tossing to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh dill or parsley if desired and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator and consume within 2 to 3 days. Stir well before serving again.
