A quick and delicious vegetarian egg sandwich, perfect for breakfast, lunch, or light dinner.
Ingredients
- 2 slices of bread
- 2 eggs
- 1 tablespoon mayonnaise
- Salt and pepper to taste
- Lettuce leaves
- Tomato slices
- Avocado (optional)
- Butter or oil for cooking
Instructions
- In a bowl, beat the eggs and season with salt and pepper.
- Heat butter or oil in a pan over medium heat.
- Pour the eggs into the pan and cook until set, stirring occasionally.
- Remove from heat and stir in mayonnaise.
- Toast the bread slices if desired.
- Assemble the sandwich by placing the egg mixture on one slice of bread.
- Top with lettuce, tomato, and avocado if using, then cover with the second slice of bread.
- Slice in half and serve.
