Description

A quick and delicious vegetarian egg sandwich, perfect for breakfast, lunch, or light dinner.


Ingredients

  • 2 slices of bread
  • 2 eggs
  • 1 tablespoon mayonnaise
  • Salt and pepper to taste
  • Lettuce leaves
  • Tomato slices
  • Avocado (optional)
  • Butter or oil for cooking


Instructions

  1. In a bowl, beat the eggs and season with salt and pepper.
  2. Heat butter or oil in a pan over medium heat.
  3. Pour the eggs into the pan and cook until set, stirring occasionally.
  4. Remove from heat and stir in mayonnaise.
  5. Toast the bread slices if desired.
  6. Assemble the sandwich by placing the egg mixture on one slice of bread.
  7. Top with lettuce, tomato, and avocado if using, then cover with the second slice of bread.
  8. Slice in half and serve.

Notes
